yummy vegan meals = health

it’s not really cooking unless you draw blood….your OWN blood…not the blood of a poor defenceless creature raised for slaughter.
i am not by any means a conventional girl with desperate housewife dreams, but i like to take care of me and my man. we like to stay healthy and treat our bodies right. we do this by being vegan and buddhist and working out our bodies and minds.
when it comes to veganism, i am a mean awesome cook. one of my favourite dinners is a rice/quinoa bowl with various toppings. a KEY topping i use all the time is my CRISPY FRIED TOFU. it’s like the KFC of vegan treats! except, no factory farming involved! and the “crispy fried” coating is actually very very healthy. and SO SO GOOD, it tastes sinful.
here’s what you will need: extra firm tofu, tamari, apple cider vinegar, sea salt & pepper, wheat germ powder, garlic powder and inactive yeast (engevita).
the coating is made from a mixture of: wheat germ, garlic powder & engevita inactive yeast flakes, sea salt and pepper. all of these are SO GOOD for your bod. inactive yeast is NOT yeasty, so it won’t upset your PH level- it is chock full of vitamin b12, something often missing in a vegan diet (but every vegan i know is healthy, educated to the max and extremely knowledgeable and great in the kitchen).
cube the tofu and then marinate it in one part tamari and one part apple cider vinegar. set aside for 1 hour. mix the dry ingredients in a mixing bowl. toss the marinated tofu in the coating and make sure each one is coated.
when it comes time to frying, i like to use coconut oil (a medium chain fat that does wonders for your body and mind), but you can use standard canola or corn oil…and you don’t need a lot. go ahead and fry the cubed, marinated and coated tofu one side at a time. i’m pretty picky about flipping my cubes and like to get each one perfect, so i often use my hands as well as the spatula when flipping.
oh my they are so good i can’t stop myself from taste testing them along the way. try to resist! ;)

This dish was a hodge podge of what we had left in the kitchen and it was delicious! Anyone who wonders “where do you get your protein” needs to look at this dish- there is TOO MUCH protein in it!!!

ORANGE MISO GLAZED TOFU & EDAMAME
D found this recipe and I went to work. The orange miso glaze was so easy to make and instead of crispy tofu, I grilled tofu steaks as recommended. Also extremely yummy! Again- protein galore.
